Madeleines al limone di Martha Stewart da “Cookies”




E' il caso di dirlo, mai come oggi il nome del blog è più appropriato... mi è esplosa la ricetta in faccia. 

Vi è mai capitato di leggere una cosa, nel mio caso una ricetta, e non accorgervi minimamente che è quella sbagliata  finché è troppo tardi?

A me è giusto capitato in questi due giorni.... In due interi giorni ho lavorato a una ricetta pensando fosse un'altra. Mi pareva un po' strana per la verità, ma non capivo cosa non quadrava. Poi alla fine del secondo impasto ho capito. Ma ormai era tardi. E la colpa è tutta mia che sono distratta...

In sostanza avrei dovuto fare la colomba e ho fatto il panettone. Va' be', per fortuna, in casa nessuno si lamenterà. Hanno solo detto “però fa anche la colomba”, così stasera inizierò a fare i rinfreschi alla mia “bimba” e farò anche quella. Giusta stavolta...

La ricetta di oggi era un po' che volevo farla: è facile e veloce e le madeleines sono dolcetti che fanno sempre  bellafigura :) 




 Ingredienti:

172,5 gr farina per torte (io ho usato la “0” della "Mulino Marino")
½ cucchiaino di lievito per dolci
½ cucchiaino di sale (io ho usato il sale rosa)
3 grosse uova più 2 grossi tuorli
168 gr zucchero granulato (io ho usato quello di canna)
1 cucchiaino di estratto di vaniglia (io ho usato la bacca)
2 cucchiai di zeste di limone
2 cucchiai di succo di limone
172,5 gr di burro non salato, a temperatura ambiente, più altro eventuale per imburrare le teglie


Procedimento:

Mischiate insieme in una ciotola la farina setacciata, il lievito e il sale.

Mettete in un'altra ciotola le uova, i tuorli, lo zucchero, la vaniglia, la zeste e il succo di limone; mischiateli con un mixer a velocità medio-alta per circa 5 minuti, finché saranno chiari e compatti. Poi aggiungete il burro montato e aggiungete la farina mischiando con una spatola dal basso verso l'alto per non smontare il composto.

Lasciate riposare per 30 minuti. Nel frattempo preriscaldate il forno a 180° e imburrate le teglie.

Versate il composto nelle forme e riempitele per i ¾. La Stewart dice di farli cuocere girando le teglie a metà cottura, io non l'ho fatto. Fate cuocere per circa 7 – 8 minuti (a me ne son serviti circa 5 in più, regolatevi col vostro forno).

Lasciate raffreddare le madeleines e poi capovolgete le teglie. Volendo potete cospargere di zucchero a velo.

Have you ever read something, in my case a recipe, without realizing it was the wrong one until it was too late?

To me it happened these last two days.... In two whole days I worked on a recipe thinking it was another one. It seemed a little bit strange to tell the truth, but I didn't understand what was wrong with the recipe. Then, at the end of the second dough, I got it. But it was too late. And the fault is all mine for being distracted ...
 

Basically I should've made the “colomba” but  I made the “panettone” instead. Thankfully, at home no one will complain. They just said: make a “colomba” as well, so this evening I will start to work on it and do the refreshments to my "baby".  Following the right recipe this time ...

This  is an easy and fast recipes and these sweets always makes a good impression :) 


Ingredients:

1 ½ cups sifted cake flour (not self-rising)
½ teaspoon baking powder
½ teaspoon coarse salt
3 large eggs plus 2 large egg yolks
¾ cup granulated sugar
1 teaspoon pure vanilla extract
2 tablespoons finely grated lemon zeste
2 tablespoons fresh lemon juice
¾ cup (1 ½ stick) unsalted butter, melted, plus some more for pans
Confectioners' sugar, for dusting (optional)



Method:

Sift the flour and mix it together with baking powder and salt into a bowl

In another bowl, put eggs, egg yolks, sugar, vanilla zeste and lemon juice. Mix them on medium-high speed with an elettric mixer filled with paddle attachmentor 5 minutes, until they become pale and thickened.

Mix in butter. Then add flour using a spatula from bottom upwards. Let it rest for 30 minutes.

Pre heat the oven to 350 F (or 180° C)

Putt batter into pans filling the molds ¾ full.

Mrs Stewart suggests to bake the cookies rotating pans halfway through the cooking time, but I didn't do it. Cook them until the edges are crisp and golden, for about 7-8 minutes ( I needed about 5 minutes more).

Leave the cookies cool down and then unmold. You can dust them with confectioner's sugar if you like.
